Yellow tea is a rare Chinese tea made much like green tea, with an extra gentle step that gives it a smooth, mellow taste.
During processing, the leaves are kept damp and allowed to oxidise slightly before drying. This step turns the leaves and the cup golden-yellow and softens the grassy edge of green tea.
Huo Shan Huang Ya Yellow is a bud tea from Anhui Province. Golden Dragon Yellow Tea is floral and buttery, and Huang Cha Yellow Tea has a chrysanthemum-like aroma. Also explore our Chinese green tea.
Yellow tea is smooth and mellow, with little of the grassy bite of green tea. Many yellow teas are floral and buttery, and some drinkers compare them to a fine, light oolong. The cup is a warm golden colour.
Use 1 to 1.5 teaspoons per 250 ml cup and water at about 88°C. Steep 2 to 4 minutes. The leaves can be steeped several times.
Both start the same way, but yellow tea has an extra step where the damp leaves rest and oxidise slightly. This makes it less grassy and less astringent than most green teas.
True yellow tea is made only in China, in small amounts, and the extra processing step takes time and skill. It is still little known outside China, so few shops carry it.
