Description

Yame Sencha – Fukuoka Reserve – Rich, Deep-Steamed Umami Sencha

Discover the rare elegance of Yame Sencha, sourced from the esteemed farmlands of Fukuoka Prefecture. Yame is a hidden gem of Japan, representing only around 3% of the country's total tea production, yet it's revered worldwide for its natural sweetness and powerful umami.

The region is legendary for producing Japan's finest gyokuro, and that heritage shines through in this sencha. Processed using a prolonged deep-steaming method, the leaves appear as fine, delicate fragments — an intentional technique that extracts maximum flavor, resulting in a stunning, opaque emerald-green liquor with a lush, velvety mouthfeel.

Tasting Notes

  • Liquor: stunning, opaque emerald green
  • Flavor: vibrant vegetal notes of fresh spinach and snow peas
  • Accents: a unique fruity nuance reminiscent of raspberry
  • Texture: lush, velvety and creamy, similar to matcha
  • Finish: warm undertones of dark chocolate and toasted sesame

Why You'll Love It

Yame Sencha is a complex masterpiece — rich, creamy and refreshing, with a texture reminiscent of matcha. It's a first-flush tea that's savory, sweet and only mildly astringent, offering a truly luxurious infusion. It's a refined, satisfying cup for any time of day.

  • From Yame, Fukuoka — a rare tea region
  • Deep-steamed for maximum flavor
  • Powerful umami and natural sweetness
  • A velvety, matcha-like texture

How to Enjoy

Brew it in a kyusu or teapot with a fine filter to catch the delicate leaf fragments, and enjoy multiple infusions. It pairs beautifully with sushi, tofu dishes and Japanese sweets, and makes a vibrant iced green tea.

Rich, creamy and deeply refreshing, Yame Sencha is a luxurious taste of Japan's hidden tea treasure.

At first I did not like this tea. I noted that the recommended brewing temperature was 190 and felt that that was way too high and brewed it at what I thought was 175. The tea did present some of the umami characteristics as described, but is was hideously bitter (for a regular sencha drinker like myself). So I tested my kettle and a setting of 175 was outputting 183... After compensating and brewing at an actual 175 I can say that I love this tea, and it earns its 5 star hype. I don't know that it will replace my faithful long term favorite Tenkaichi, but I can now safely recommend this wonderful sencha, just don't brew it even a hair over 175.

Happy steeping!

First try finds an excellent umami, and low in astringency. I use 2.5 g steeped multiple times in 80 ml. Very pleasant effects. Similar to my previous preference which is a more expensive gyokuro. Notes do not indicate shade grown which may be what I wanted from this tea, perhaps a less potent stimulation yet possessing good umami. Will have to see long term the GI effects etc, but first impression places this at top of list.

Just fantastic. It is very aromatic, satisfying, and simply divine. It is a bit on the pricey side, but it is really worth it.
